Ingredients
½ cup olive oil
¼ cup white wine vinegar
1 teaspoon Tajin Chilli lime seasoning
1 teaspoon salt
Freshly ground pepper
½ large cantaloupe (or honeydew or watermelon, rind and seeds removed, cut into 1 inch slices
1 large English cucumber, sliced on the diagonal
½ cup unsalted pepitas
¼ cup chopped cilantro
¼ cup torn mint leaves
Directions
In a large bowl, whisk together olive oil, vinegar, Tajin Chilli, salt and pepper. Add melon and cucumbers and toss to coat. Let sit for 15 minutes.
Transfer mixture to a serving platter or bowl. Top with pepitas, cilantro and mint.
