This five-minute prep recipe brings a fresh hero side to your plate.
1lb sweet mini peppers
1/4lb buffalo mozzarella
Fresh basil leaves
1 tablespoon olive oil
Salt and peppr
Preheat broiler to high.
Using a small knife, carefully cut a slit down one side of each pepper. Scoop out the seed pods with a small spoon.
Cut the mozzarella into thick rectangles. Stuff each pepper with a slice of cheese and a fresh basil leaf. Repeat with all peppers.
Place peppers on a baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Broil until skins are charred and cheese is melted.
Garnish with additional basil leaves and serve.
