Tender-leaf Butter Lettuce with olive oil essence and creamy avocado.
2 tablespoons olive oil
1 tablespoon lime juice
¼ teaspoon salt
¼ teaspoon pepper
1 small red onion, thinly sliced (about 1 cup)
3 cups torn butter lettuce
1 small avocado, sliced (about 1 cup)
In a small bowl whisk together olive oil, lime juice, salt and pepper. Add red onion and allow to stand for 10 minutes.
In a large bowl combine butter lettuce and avocado. Drizzle with olive oil and onion mixture. Toss gently. Serve immediately.
