Make this flavourful Thai Cucumber Salad for a summery lunch in under 20 minutes. It requires basic ingredients and is super easy to make too.
2 English cucumbers
1/4 cup green onion (chopped)
1/4 cup roasted peanuts (crushed)
For the dressing
1 tsp sesame oil
1 tbsp coconut sugar
2 tbsp rice vinegar
1 tsp fish sauce
1/2 tsp garlic (minced)
1 tbsp lemon juice
1 tsp red chilli flakes
Wash the cucumbers and cut them into thin roundels.
Mix the ingredients for the salad dressing into a bowl.
Pour the dressing over the cucumber slices and toss well.
Sprinkle roasted peanuts and spring on top.
