Tomato Basil Chicken

Make this delicious Tomato Basil Chicken for a hearty meal. Pair it with some steamed rice, noodles or pasta for a delightfully filling meal.

Boneless Chicken Breast - 1 lb

Olive oil - 4 tbsp

Garlic - 1 tsp (minced)

Tomatoes - 1 cup (chopped)

Butter - 4 tbsp

Fresh Cream - 2 tbsp

Basil - a handful (chopped)


Pound the chicken breasts to even thickness.

Heat olive oil in a pan.

Once the oil is hot, place the chicken breasts into the pan and cook them on both the sides until nicely browned and cooked throughout. Remove them to a side dish.

Add garlic into the pan and fry for a few seconds.

Stir in tomatoes and broth and cook until tomatoes become slightly mushy.

Add butter and cream and cook for another minute.

Add the cooked chicken breasts into the pan and coat with the sauce.

Add basil and mix well.

Serve hot with rice or pasta.
