BMF greenhouse grown tomato varieties take this caprese salad to the next level.
1 pint mixed cherry tomatoes, halved
1/3 cup high quality extra virgin olive oil, divided
2lbs mixed tomatoes, thinly sliced
8oz fresh buffalo mozzarella or burrata cheese
Fresh ground pepper
Toss cherry tomatoes and 1 Tablespoon olive oil together in a small bowl. Season with salt and pepper to taste.
Layer tomato slices on a platter. Gently tear mozzarella cheese and place over the tomato layer. Sprinkle lightly with salt and pepper. Spoon cherry tomatoes over the top of the mozzarella and drizzle with remaining olive oil.
Allow salad to sit for 30 minutes at room temperature while juices combine. When ready to serve, top with basil leaves.
